It’s almost Valentine’s Day. For most of the population, Valentine’s Day is a quaint tradition created by the Gift Card Industrial Complex. For restaurant workers, it’s another matter entirely: It’s a work day. A very long and difficult work day. For the front of house it’s a constant stream of questions about the tasting menu. For the back of house it’s days of prep and broken sauces.
